Dreamfarm is an Italian company founded in 2021, producing vegan cheeses based on Mediterranean almonds. As mentioned on the website “We naturally ferment them in Parma using our unique method (EU Patent Pending) that will elevate their taste, texture and nutritional profile.”1
The whole product presentation is attractive, with colourful packaging and a similar-style, sympthetical website.
Looking at the picture on the packaging, the image looks like an oval-shaped mozzarella ball, where the contents on the inside of the cheese is more soft and chunky like stracciatella cheese, surrounded to the outside by a more firm and smooth outer layer. As can be seen on our pictures, when we cut the cheese, we basically found the same consistency in the centre and on the outside.
The smell seems similar to a mozzarella cheese, likely reflecting the addition of lactic acid bacteria in the preparation. The taste and mouthfeel however is disappointing. It is a bit chewy and we couldn’t decide on a good description of the taste. It seems to have some neutral tasting component, which reminds us mostly of cereal, which may be the psyllium husks in the added dietary fibres. But, whatever it is, it does not give it a nice flavour. The cheese misses the creamy richness combined with lightness, freshness and acidity of mozzarella.
Overall, while the packaging looks great and the ball in brine has an appearance similar to mozzarella, the taste and mouthfeel was a disappointment to us. The disillusion may be even greater after the expectation had been raised initially by the appearance and then having the tasting experience not meet the high expectation.
