Fervena is one of the proponents of producing healthy vegan alternatives to dairy cheese, using fermentation and few ingredients. Snow White is based on cashew nuts at 55% of the ingredients, plus water, salt and ferments. Among the cheese we have reviewed so far, the salt content of this cheese is the lowest of all at 1.3 grams per 100 grams (neither do we see huge differences though, the maximum so far is 2.01 grams).
The white rind makes it look like cheese and to us also appears to indicate the addition of a mould culture like Penicillium Camemberti, which give it a nice taste of earthy vegetables, slightly spicy and mushroomy.
As the water contents is a bit higher than in most other cashew-based vegan cheeses we reviewed, we think the texture is also a bit more moist, while the cheese also still crumbly. This may relate to Snow White being classified by Fervena as a vegan alternative to brie, while we have bunched it in here with the camembert-like category we use for both.1 As a nut-paste based cheese the meltability remains poor.
We add it to our cheese platter, since overall looks, texture and taste are great.
