



Fermè is a product range within the fermentino types of cheese that is based on cashews, water and salt. Depending on the specific product, the fermentino has different aromatic herbs and natural spices added, for example black pepper in this case. Also, there are spreadable and semi-aged types in the range. Whereas the spreadable type is ready after the fermentation process, this semi-aged fermentino dries and matures for about 5 more days before it is ready.
As this is a fermentino, its aim is not to imitate any particular cheese, but rather to provide a tasty, healthy and organic alternative to dairy cheese, with a low amount of processing. To learn more about the ‘original fermentino’, have a look at our review of Cicioni.
This is the second Fermè we review and we enjoyed it, just like the Herbs and Flowers type we reviewed earlier. Also here, the apparently freshly milled black pepper taste of the added spice goes well together with the fresh, acidy taste of the fermented cashew nuts, in this case with notes of earthy vegetables like potato and leek.
On its own, with its pleasant taste and texture, we would happily add it to our vegan cheese platter and would pair it with a glass of wine, crackers and honey.
